*HOT* GREAT price on Chicken Breasts



Yesterday, I headed to Asian Pacific Market, located at 615 Wooten Street off of Platte. We were completely out of soy sauce which is a disaster in my house! I had also heard rumors that chicken breasts are cheap there so I thought I'd check it out. We were in desperate need of chicken breasts as well. What luck! They were $1.50/lb which is an excellent price for chicken breasts! I asked one of the clerks there and he told me that while that price isn't always available (it can go up to $1.89/lb) it is a fairly regular price. I don't think I've ever seen that price at a regular grocery store. The lowest I've seen it at King Soopers is $1.69/lb. Rancho Liborio on South Circle runs specials with that price from time to time. I think I've seen it twice last year. But I refuse to buy meat from them again. The last time I bought chicken there, it went bad overnight. Oh my goodness, the smell! These chicken breasts at Asian Pacific looked and smelled fresh. I also baked one last night and it was so juicy! So if you're in need for chicken breasts, head to Asian Pacific. They also have a huge selection of rice noodles, asian noodle, rice, and excellent prices on produce. Check it out, you won't be disappointed!

How to use E-coupons


I don’t think I’ve mentioned e-coupons before and this week's King Soopers sale uses them a lot so I thought I'd write a post on how they work. E-coupons are coupons you can add directly to your shoppers card. They come off automatically when you scan your card. E-coupons do not double and can only be used once, even if you do separate transactions. So unlike printed coupons where you can use as many as you can get, e-coupons cannot. I’ve never had a problem with using them at King Soopers. Safeway is another story. They never seem to come off there! You do need to have a King Soopers card or Safeway card and can get them for free at the Customer Service counter at the store. Some sites that you can use to load coupons from are listed below. A long lost sweet potato recipe

For 3 years, I lived with 4 other girls that all didn't particularly like sweet potatoes. How they all could have been raised to dislike this yummy, tantalizing potato is beyond me but it happened. But, all of them LOVED this recipe, which comes from the archives of Williams-Sonoma. It's no longer available on their website or any of their new cookbooks, not sure why. It should be. I'm not trying to toot my own horn but I am a pretty decent cook. Not everything I attempt is a hit but I do like trying! This recipe ranks among my top successes. I've brought it to Thanksgiving and other holiday potlucks for several years now and no one, even the most passionate sweet potato hater, has ever said they didn't like it. I mean come one, it's got almost 2 entire sticks of butter in it and a topping like apple crisp. Does it get any better than that? So consider this your lucky day. You've just found the best holiday side dish there is :)

Ingredients:

Pecan/Brown Sugar Topping:
• 1 cup flour
• ¾ cup firmly packed light brown sugar
• 1 teaspoon salt
• 1 teaspoon ground cinnamon
• 8 tablespoons cold unsalted butter, cut into half inch cubes
• 1 cup toasted chopped pecans

Sweet Potatoes:
• 5 pounds sweet potatoes
• ¼ cup milk
• 2 teaspoons vanilla
• 6 Tablespoons unsalted butter melted
• 3 eggs• ½ cup maple syrup
• ¼ cup firmly packed light brown sugar
• 2 teaspoons kosher salt
• Pepper to taste
• Pinch of freshly grated nutmeg (optional)

Instructions:
  • Preheat oven to 450 degrees.
  • Place potatoes in a large roasting pan with a small amount of water, cover the pan tightly with aluminum foil, cook potatoes until tender, about an hour to an hour and a half. Transfer potatoes out of pan and let cool.
  • Reduce oven to 350 degrees.
  • Peel off potato skins when cool, cut the flesh into half-inch cubes.
  • Transfer ¼ of potatoes to a large bowl and mash with a potato masher. Add the remaining potatoes and stir.
  • In a separate bowl whisk together the milk, vanilla, butter, eggs, maple syrup, brown sugar, salt, pepper and nutmeg. Add mixture to the sweet potatoes.
    For the topping, prepare in a bowl — stir flour, brown sugar, salt, cinnamon, butter, then toasted pecans, the topping should hold together in your fingers but crumble easily.
  • Transfer potato mixture to a large rectangular baking dish and sprinkle with topping.
  • Bake around 45-60 minutes or until the top is crisp and brown.

I know I've been sadly neglective when it comes to posting lately. Life has been overwhelming as I've started the nursing program here in town and a brand new job. Limoncello Fruit Salad


I made this very summery dish last night for my family and it was just scrumptious! We still have 2 bottles of limoncello in the freezer from our cruise 3 years ago and so I'm constantly trying to find recipes to use it in. It's potent stuff! This dish was elegant, easy, and nutritious. A perfect compliment to a summer menu!



Ingredients
• 7 ounces Greek yogurt
• 1/3 cup good bottled lemon curd
• 1 tablespoon honey
• 1/4 teaspoon pure vanilla extract
• 2 cups sliced strawberries (1 pint)
• 1 cup raspberries (1/2 pint)
• 1 cup blueberries (1/2 pint)
• 2 tablespoons sugar
• 3 tablespoons limoncello liqueur
• 1 banana, sliced
• Fresh mint springs

Directions

For the lemon yogurt topping, whisk together the yogurt, lemon curd, honey, and vanilla and set aside at room temperature.
For the fruit salad, carefully toss together the strawberries, raspberries, blueberries, sugar, and limoncello. Allow them to stand at room temperature for about 5 minutes to let the berries macerate with the sugar and liqueur. Gently fold the banana into the mixture.
Serve bowls of fruit with a dollop of lemon yogurt on top. Top each with a sprig of fresh mint.
